Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- Combine flour, baking powder, salt, and cinnamon in a bowl.
- Mix coconut milk, honey, and vanilla in a separate bowl, then combine with dry ingredients.
- Knead the dough lightly and shape it into a square, then cut into 9 squares.
- Brush the tops with coconut milk and sprinkle with sugar if desired, then bake for 20-22 minutes.
- Prepare the whipped cream by beating the solid part of chilled coconut milk with honey and vanilla.
- Mash half of the strawberries and mix with the remaining sliced strawberries and honey.
- Assemble the shortcakes by layering strawberries and whipped cream between the shortcake halves.
