Freezable Stuffing with Kale and Caramelized Onions

Ingredients

  • 1 pound loaf of bread
  • ½ cup extra-virgin olive oil
  • kosher salt to taste
  • pepper to taste
  • 4 tablespoons unsalted butter
  • 2 cups sliced onions
  • 8 ounces kale
  • cups homemade chicken stock or store-bought
  • 1 large egg
  • softened butter

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the torn bread with ¼ cup of olive oil and season with salt and pepper.
  3. Spread the bread on a sheet pan and toast for 15 to 17 minutes until golden.
  4. In a large sauté pan, melt the remaining butter and olive oil over medium heat, then add the onions and cook until caramelized.
  5. Combine the cooked onions with the kale in a bowl and toss together.
  6. Add the toasted bread, 1 cup of chicken stock, salt, and pepper to the kale and onion mixture, and toss to combine.
  7. Whisk the remaining chicken stock with the egg and add it to the mixture, tossing to combine.
  8. Grease a 9x13-inch baking pan with softened butter and spread the stuffing mixture into it.
  9. Cover the pan with foil and bake for 30 minutes, then uncover and bake for an additional 15 to 20 minutes until golden.
