Freezable Stuffing with Kale and Caramelized Onions

Instructions
- Preheat the oven to 400°F.
- Toss the torn bread with ¼ cup of olive oil and season with salt and pepper.
- Spread the bread on a sheet pan and toast for 15 to 17 minutes until golden.
- In a large sauté pan, melt the remaining butter and olive oil over medium heat, then add the onions and cook until caramelized.
- Combine the cooked onions with the kale in a bowl and toss together.
- Add the toasted bread, 1 cup of chicken stock, salt, and pepper to the kale and onion mixture, and toss to combine.
- Whisk the remaining chicken stock with the egg and add it to the mixture, tossing to combine.
- Grease a 9x13-inch baking pan with softened butter and spread the stuffing mixture into it.
- Cover the pan with foil and bake for 30 minutes, then uncover and bake for an additional 15 to 20 minutes until golden.
