Greek Goddess Grain Bowl

Ingredients

The Bowl

  • cups mixed raw grains
  • 2 tablespoons fresh mint
  • 2 tablespoons fresh oregano
  • 1 large roasted red bell pepper
  • 1 cup roasted artichoke hearts
  • 1 cup cherry tomatoes
  • 1 large avocado
  • ½ cup mixed olives
  • optional hard boiled eggs
  • optional fresh basil, dill and balsamic vinegar

Tahini Goddess Drizzle

  • ¼ cup tahini
  • 2 cloves garlic
  • 2 tablespoons fresh lemon juice
  • ¼ cup nutritional yeast
  • ½ cup olive oil
  • to taste salt and pepper
  • 1 cup fresh basil leaves
  • 1 medium jalapeno
  • 1 tablespoon honey

Toasted Seeds

  • 2 tablespoons olive oil
  • ¼ cup pine nuts
  • ¼ cup shelled sunflower seeds
  • ¼ cup flax seeds
  • ¼ cup hemp seeds
  • ¼ cup sesame seeds

Fried Zucchini + Halloumi

  • 2 medium zucchinis
  • cup canned coconut milk
  • ¾ cup Panko bread crumbs
  • 2 tablespoons cornmeal
  • ½ cup nutritional yeast
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 8 ounces Halloumi cheese

Instructions

  1. Boil water and cook the grains until tender, then stir in fresh herbs.
  2. Blend tahini drizzle ingredients until smooth and adjust seasoning.
  3. Toast seeds in a skillet until fragrant, then season with salt.
  4. Prepare zucchini by coating in coconut milk and dredging in breadcrumbs, then fry until golden.
  5. In the same skillet, fry Halloumi slices until golden on both sides.
  6. Assemble bowls with grains, vegetables, toasted seeds, fried zucchini, and Halloumi.
  7. Drizzle with tahini sauce and garnish with herbs and optional eggs.
