Ingredients

The pasta

  • 8 ounces gluten free pasta

The sauce

  • 1 ½ tablespoons butter
  • 1 ½ tablespoons gluten free flour
  • 1 ¼ cups milk
  • 8 ounces cheddar cheese, grated
  • 2 teaspoons Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground pepper

The topping

  • ½ cup breadcrumbs, gluten-free

Instructions

  1. Preheat the oven to 350 degrees.
  2. Cook the pasta according to the package directions.
  3. Melt the butter in a saucepan over medium heat and add the flour, cooking for 2 to 3 minutes while stirring frequently.
  4. Add the milk and cook until the mixture thickens, about 4 minutes.
  5. Reduce the heat to low and stir in the cheddar cheese until melted.
  6. Mix in the Dijon mustard, sea salt, and pepper.
  7. Combine the cooked pasta with the cheese sauce.
  8. Transfer the mixture to a medium baking dish and top with breadcrumbs.
  9. Bake for 30 minutes.
  10. Allow to sit for 10 minutes before serving.
