Ingredients

The soup base

  • ½ medium onion, diced
  • 3 ribs celery, diced
  • 6 ounces mushrooms, sliced or diced
  • 5 cloves garlic, minced
  • 1 cup whole grain wild rice
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 8 cups chicken broth

The finishing touches

  • ½ cup heavy cream
  • to taste toasted almonds (optional topping)

Instructions

  1. Place the onion, celery, mushrooms, garlic, rice, raw chicken, salt, and pepper in a slow cooker.
  2. Pour the chicken broth over the ingredients.
  3. Cook on low for 4 to 5 hours.
  4. Chop or shred the chicken and stir in the heavy cream.
  5. Ladle the soup into bowls and top with toasted almonds if desired.
  6. Store leftovers in the fridge or freeze in individual portions.
