Ingredients

The cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • tsp baking soda
  • 1 tsp salt
  • 1 cup whole milk
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup canola oil
  • 1 cup boiling water

The frosting

  • 5 large egg yolks
  • cups evaporated milk
  • cups granulated sugar
  • ½ cup salted butter
  • tsp vanilla extract
  • 2 cups sweetened flaked coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F and prepare two 9-inch round cake pans.
  2. In a bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the milk, eggs, and vanilla to the dry ingredients and mix with an electric mixer until combined.
  4. Slowly mix in the oil and then carefully add the boiling water, mixing until well combined.
  5. Pour the batter into the prepared cake pans and bake for about 30-35 minutes until a toothpick comes out clean.
  6. Let the cakes cool for 10 minutes before inverting them onto wire racks to cool completely.
  7. For the frosting, whisk together egg yolks and evaporated milk in a saucepan, then add sugar and whisk until dissolved.
  8. Add butter and cook over medium-low heat, whisking constantly until thickened, about 10-12 minutes.
  9. Remove from heat and stir in vanilla, coconut, and pecans. Let cool until just warm before spreading over the cake.
