Instructions
- Preheat the oven to 350°F and prepare two 9-inch round cake pans.
- In a bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the milk, eggs, and vanilla to the dry ingredients and mix with an electric mixer until combined.
- Slowly mix in the oil and then carefully add the boiling water, mixing until well combined.
- Pour the batter into the prepared cake pans and bake for about 30-35 minutes until a toothpick comes out clean.
- Let the cakes cool for 10 minutes before inverting them onto wire racks to cool completely.
- For the frosting, whisk together egg yolks and evaporated milk in a saucepan, then add sugar and whisk until dissolved.
- Add butter and cook over medium-low heat, whisking constantly until thickened, about 10-12 minutes.
- Remove from heat and stir in vanilla, coconut, and pecans. Let cool until just warm before spreading over the cake.
