Ingredients

The crust

  • 2 cups all-purpose flour
  • 12 tablespoons unsalted cold butter
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 teaspoon orange zest
  • ½ to ¾ cup ice cold water

The filling

  • 5 pounds peaches
  • ¼ cup brown sugar
  • ¼ cup flour
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • teaspoon allspice
  • ½ teaspoon kosher salt
  • zest and juice of one orange
  • 1 egg beaten with 1 tablespoon milk
  • 2 tablespoons sugar

Instructions

  1. Prepare the crust by combining flour, butter, salt, sugar, and orange zest in a food processor and pulse until the mixture resembles small peas.
  2. Add ¼ cup iced water and pulse until the dough just comes together, adding more water as needed.
  3. Knead the dough briefly, form into two discs, and wrap in plastic wrap. Chill for 1 hour.
  4. Roll out each disc into a circle about 12 inches in diameter, placing one in a pie pan.
  5. For the filling, peel and pit the peaches, slicing them thickly, and mix with brown sugar, flour, cinnamon, nutmeg, allspice, salt, orange zest, and orange juice.
  6. Pour the peach mixture into the crust, piling it high in the center.
  7. Cover with the second crust, crimp the edges, and cut slits in the top.
  8. Brush with egg wash and sprinkle with sugar.
  9. Bake on a baking sheet at 375°F for 50-55 minutes.
  10. Let the pie rest for about 30 minutes before serving.
