Mountain Fresh Peach Pie

Instructions
- Prepare the crust by combining flour, butter, salt, sugar, and orange zest in a food processor and pulse until the mixture resembles small peas.
- Add ¼ cup iced water and pulse until the dough just comes together, adding more water as needed.
- Knead the dough briefly, form into two discs, and wrap in plastic wrap. Chill for 1 hour.
- Roll out each disc into a circle about 12 inches in diameter, placing one in a pie pan.
- For the filling, peel and pit the peaches, slicing them thickly, and mix with brown sugar, flour, cinnamon, nutmeg, allspice, salt, orange zest, and orange juice.
- Pour the peach mixture into the crust, piling it high in the center.
- Cover with the second crust, crimp the edges, and cut slits in the top.
- Brush with egg wash and sprinkle with sugar.
- Bake on a baking sheet at 375°F for 50-55 minutes.
- Let the pie rest for about 30 minutes before serving.
