Instructions
- Preheat the oven to 400ºF.
- Combine flour, salt, sugar, and baking powder in a bowl and stir well.
- Add blueberries to the dry ingredients and stir to combine.
- Pour in heavy whipping cream and stir until a dough forms, avoiding over stirring.
- Divide the dough into six pieces, shape into balls, and place on a parchment-lined baking sheet.
- Bake for 23-25 minutes until golden brown, then cool.
- While biscuits bake, prepare vanilla whipped cream by whipping heavy cream, sugar, and vanilla until stiff peaks form.
- Once biscuits are cool, slice them in half.
- On the bottom half, add whipped cream, lemon curd, and fresh blueberries, then place the top half on.
- Serve immediately.
