Ingredients

Blueberry Biscuits

  • cups all-purpose flour
  • ½ tsp salt
  • 1 Tbsp sugar
  • 2 tsp baking powder
  • 1 cup heavy whipping cream
  • 1 cup blueberries

Vanilla Whipped Cream

  • 1 cup heavy whipping cream
  • 2 Tbsp sugar
  • 1 tsp vanilla extract

Toppings

  • ¾ cup lemon curd
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 400ºF.
  2. Combine flour, salt, sugar, and baking powder in a bowl and stir well.
  3. Add blueberries to the dry ingredients and stir to combine.
  4. Pour in heavy whipping cream and stir until a dough forms, avoiding over stirring.
  5. Divide the dough into six pieces, shape into balls, and place on a parchment-lined baking sheet.
  6. Bake for 23-25 minutes until golden brown, then cool.
  7. While biscuits bake, prepare vanilla whipped cream by whipping heavy cream, sugar, and vanilla until stiff peaks form.
  8. Once biscuits are cool, slice them in half.
  9. On the bottom half, add whipped cream, lemon curd, and fresh blueberries, then place the top half on.
  10. Serve immediately.
