Ingredients

The biscuits

  • 6 tablespoons cold butter
  • ¼ cup granulated sugar
  • 1 medium lemon
  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • 1 cup non-fat plain Greek yogurt
  • ¼ cup milk
  • 1 large egg
  • 1 cup fresh or frozen blueberries

The lemon glaze

  • 1 cup powdered sugar
  • 3 tablespoons freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Chill the diced butter in the freezer while preparing the other ingredients.
  3. In a mixing bowl, rub lemon zest into the sugar until fragrant.
  4. Add the dry ingredients to the bowl and mix well.
  5. Cut in the cold butter until the mixture resembles coarse crumbs.
  6. In another bowl, whisk together Greek yogurt, milk, and egg.
  7. Combine the wet and dry ingredients, stirring until just moistened.
  8. Gently fold in the blueberries.
  9. Drop the batter onto the prepared baking sheet, leaving space between each.
  10. Bake for 12 to 18 minutes until golden and a toothpick comes out clean.
  11. While baking, prepare the glaze by mixing powdered sugar and lemon juice.
  12. Drizzle the glaze over warm biscuits before serving.
