One Skillet Sun Dried Tomato Chicken and Gnocchi

Instructions
- Heat olive oil in a large skillet over medium heat and sauté sun dried tomatoes and garlic until fragrant.
- Add uncooked gnocchi, chicken broth, half and half, salt, and pepper, then cover and cook until gnocchi are fluffy.
- Remove cover, mix in shredded chicken and spinach, and cook until spinach is wilted.
- Sprinkle with cheese and cook until melted, then serve.
