One Skillet Sun Dried Tomato Chicken and Gnocchi

Ingredients

  • 12 oz gnocchi
  • 2 cups shredded rotisserie chicken
  • 2 cups baby spinach leaves
  • ½ cup sun dried tomatoes
  • 1 Tbsp garlic
  • 1 cup chicken broth
  • ½ cup half and half
  • 1 Tbsp olive oil
  • ½ cup Asiago cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté sun dried tomatoes and garlic until fragrant.
  2. Add uncooked gnocchi, chicken broth, half and half, salt, and pepper, then cover and cook until gnocchi are fluffy.
  3. Remove cover, mix in shredded chicken and spinach, and cook until spinach is wilted.
  4. Sprinkle with cheese and cook until melted, then serve.
