Instructions
- Rinse the quinoa and combine it with water in a pot. Bring to a boil, then simmer until water is absorbed. Let it rest for 5 minutes and fluff with a fork.
- Toast the almonds in a skillet over medium heat until fragrant and golden, then transfer to a bowl to cool.
- Prepare the broccoli by trimming and shredding it using a food processor or by hand.
- Whisk together all dressing ingredients until emulsified, adjusting for taste.
- In a large bowl, combine the shredded broccoli, cooked quinoa, and chopped basil. Pour the dressing over and toss well.
- Let the slaw rest for about 20 minutes before serving to enhance the flavors.
