Quinoa Broccoli Slaw

Ingredients

The slaw

  • ¾ cup uncooked quinoa
  • 1 ½ cups water
  • ½ cup slivered or sliced almonds
  • 1 ½ pounds broccoli
  • cup chopped fresh basil

Honey-mustard dressing

  • ½ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons smooth Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 2 medium cloves garlic
  • ½ teaspoon sea salt
  • to taste freshly ground pepper
  • optional red pepper flakes

Instructions

  1. Rinse the quinoa and combine it with water in a pot. Bring to a boil, then simmer until water is absorbed. Let it rest for 5 minutes and fluff with a fork.
  2. Toast the almonds in a skillet over medium heat until fragrant and golden, then transfer to a bowl to cool.
  3. Prepare the broccoli by trimming and shredding it using a food processor or by hand.
  4. Whisk together all dressing ingredients until emulsified, adjusting for taste.
  5. In a large bowl, combine the shredded broccoli, cooked quinoa, and chopped basil. Pour the dressing over and toss well.
  6. Let the slaw rest for about 20 minutes before serving to enhance the flavors.
