Instructions
- Wash and dry the broccoli.
- Cut the broccoli florets away from the stem and chop into small pieces.
- Peel the broccoli stem and julienne it into thin matchstick pieces.
- Wash, dry, and peel the carrot, then julienne it similarly.
- In a small bowl, whisk together the dressing ingredients: mayo, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the broccoli slaw and toss to coat.
- Add the almonds and toss again.
- Enjoy immediately or refrigerate for at least 1 hour to let flavors develop.
