Ingredients

Broccoli Slaw

  • 1 lb Broccoli with stems
  • 1 medium Carrot
  • cup Sliced almonds (optional)

Dressing

  • ½ cup Mayonnaise
  • 2 tbsp Apple cider vinegar
  • 3 tbsp Honey
  • 1 tsp Dijon mustard (optional)
  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)

Instructions

  1. Wash and dry the broccoli.
  2. Cut the broccoli florets away from the stem and chop into small pieces.
  3. Peel the broccoli stem and julienne it into thin matchstick pieces.
  4. Wash, dry, and peel the carrot, then julienne it similarly.
  5. In a small bowl, whisk together the dressing ingredients: mayo, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the broccoli slaw and toss to coat.
  7. Add the almonds and toss again.
  8. Enjoy immediately or refrigerate for at least 1 hour to let flavors develop.
