Ingredients

The slaw

  • 1 12 oz. bag broccoli slaw mix
  • ½ cup diced red onion
  • 1 cup fresh cilantro, chopped
  • ½ cup sliced almonds or sunflower seeds
  • ½ cup dried cranberries or raisins

The dressing

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon spicy brown mustard
  • tablespoons honey or maple syrup
  • 1 clove garlic, minced
  • ½ inch fresh ginger, minced
  • ¼ teaspoon salt
  • to taste freshly ground black pepper

Instructions

  1. Combine the broccoli slaw, red onion, cilantro, almonds, and cranberries in a large bowl.
  2. In a separate bowl, whisk together the olive oil, vinegar, mustard, honey, garlic, ginger, salt, and black pepper.
  3. Pour the dressing over the salad ingredients and toss to coat.
  4. Let the salad rest for at least 15 minutes before serving to allow the flavors to marinate.
  5. Store any leftovers in an airtight container in the fridge for up to 48 hours.
