Ingredients

Yogurt Sauce

  • ¾ to 1 cup plain yogurt
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons honey or agave (optional)
  • 1 ½ to 2 Tablespoons lemon juice or apple cider vinegar
  • ¾ – 1 teaspoon kosher salt
  • ¼ – ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon ground mustard or 2 teaspoons Dijon mustard

Salad

  • 16 ounces broccoli slaw
  • cup mandarin orange slices
  • ½ cup chopped cilantro or curly parsley
  • cup dried cranberries (optional)
  • ¼ cup roasted sunflower seeds
  • ⅓ to ½ cup chopped green onion

Instructions

  1. Prepare the dressing by whisking together yogurt, olive oil, vinegar, honey, salt, and pepper in a bowl.
  2. In a large bowl, combine broccoli slaw, mandarin oranges, cilantro, cranberries (if using), sunflower seeds, and green onions.
  3. Pour the dressing over the slaw and toss to combine. For a creamier texture, refrigerate for 1-2 hours before serving.
  4. Toss the slaw again and garnish with remaining green onions before serving.
