10 Minute Instant Pot Mushroom Broth

Ingredients

  • 8 cups water
  • 15 g dried porcini mushrooms
  • 6 medium cloves garlic
  • scant 1 teaspoon fine grain sea salt
  • ½ teaspoon freshly ground pepper
  • a sprig or two fresh thyme

Instructions

  1. Combine water, dried mushrooms, and garlic in the Instant Pot.
  2. Close and seal the pot, then pressure cook on high for 10 minutes.
  3. Carefully quick release the pressure, then open the lid away from you.
  4. Season the broth with salt, pepper, and thyme, adjusting to taste.
  5. If not using immediately, freeze any leftover broth.
