Sweet Chickpea Pancakes

  • ½ cup chickpea flour
  • cup water
  • 1 tablespoon maple syrup
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla extract
  • pinch salt

Instructions

  1. Mix the pancake ingredients in a large bowl and whisk until smooth, letting the batter rest for 10 minutes.
  2. Grease a skillet and heat it over medium-low heat until a drop of water sizzles on contact.
  3. Scoop ¼ cup of batter and pour it into the skillet.
  4. Cook until bubbles form in the center, then flip the pancake and cook for another 1-2 minutes.
  5. Repeat with the remaining batter, making about 3 pancakes in total.
  6. Serve warm with your choice of toppings.
