Authentic Mexican Rice

Ingredients

The rice

  • 1 cup uncooked long grain white rice
  • cups unsalted chicken broth or water
  • 2 Tbsp unsalted chicken broth or water

The flavorings

  • 1 medium roma tomato, minced
  • tsp Caldo de Tomate
  • ½ tsp onion powder
  • ¼ tsp chili powder
  • ¼ tsp freshly ground black pepper
  • 1 large garlic clove, minced

The cooking oil

  • 1 Tbsp olive oil or vegetable oil

Instructions

  1. Whisk together warm water, minced tomato, Caldo de Tomate, onion powder, chili powder, and black pepper, then set aside.
  2. Heat olive oil in a medium non-stick saucepan over medium heat, then add rice and sauté until opaque and lightly golden.
  3. Add minced garlic and sauté for an additional 30 seconds.
  4. Pour in the water mixture carefully, stir once to level out the rice, and ensure it simmers.
  5. Reduce heat to low, cover, and simmer until the liquid is absorbed, about 20 minutes.
  6. Remove from heat, fluff the rice with a fork, cover, and let rest for 5 minutes before serving.
