Easy Balsamic Veggie Pasta

Ingredients

The pasta

  • 12 ounces uncooked pasta (penne)

The veggies

  • 1 small red onion
  • 1 pound asparagus
  • 1 small head broccoli florets
  • 1 small red bell pepper
  • 5 cloves garlic

The sauce

  • 3 tablespoons olive oil
  • 3-4 tablespoons balsamic vinegar
  • Kosher salt
  • freshly-cracked black pepper
  • freshly-grated Parmesan cheese

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and set aside.
  2. In a large sauté pan, heat 2 tablespoons of olive oil over medium-high heat.
  3. Sauté the red onion for about 4 minutes, then add the asparagus, broccoli, and red bell pepper, seasoning with salt and pepper.
  4. Continue sautéing for 4-5 minutes, then add the minced garlic and sauté for another 1-2 minutes until fragrant.
  5. Return the stockpot to the stove and add the remaining tablespoon of olive oil, the cooked pasta, veggie mixture, balsamic vinegar, and black pepper, tossing to combine.
  6. Sauté for 1-2 minutes until the pasta is lightly toasted, then taste and adjust seasoning if necessary.
  7. Serve warm, garnished with Parmesan cheese.
