Easy Balsamic Veggie Pasta

Instructions
- Cook the pasta in salted boiling water until al dente, then drain and set aside.
- In a large sauté pan, heat 2 tablespoons of olive oil over medium-high heat.
- Sauté the red onion for about 4 minutes, then add the asparagus, broccoli, and red bell pepper, seasoning with salt and pepper.
- Continue sautéing for 4-5 minutes, then add the minced garlic and sauté for another 1-2 minutes until fragrant.
- Return the stockpot to the stove and add the remaining tablespoon of olive oil, the cooked pasta, veggie mixture, balsamic vinegar, and black pepper, tossing to combine.
- Sauté for 1-2 minutes until the pasta is lightly toasted, then taste and adjust seasoning if necessary.
- Serve warm, garnished with Parmesan cheese.
