Instructions
- 1. Boil salted water and cook the pasta according to the package instructions, then drain.
- 2. In a large bowl, combine the cooked pasta with chopped arugula and roasted peppers or cherry tomatoes.
- 3. Add crumbled goat cheese and toss with a drizzle of olive oil, lemon juice, or vinegar, along with salt and pepper.
- 4. Mix in the arugula last.
