Ingredients

The pasta

  • ½ box whole wheat pasta

The salad

  • 3 handfuls arugula
  • to taste roasted red peppers and/or cherry tomatoes
  • ½ container crumbled goat cheese
  • to taste tablespoon olive oil
  • 1 lemon fresh lemon juice
  • to taste white wine vinegar
  • to taste salt
  • to taste freshly ground pepper

Instructions

  1. 1. Boil salted water and cook the pasta according to the package instructions, then drain.
  2. 2. In a large bowl, combine the cooked pasta with chopped arugula and roasted peppers or cherry tomatoes.
  3. 3. Add crumbled goat cheese and toss with a drizzle of olive oil, lemon juice, or vinegar, along with salt and pepper.
  4. 4. Mix in the arugula last.
