Ingredients

  • ½ cup creamy peanut butter, unsalted
  • ½ cup agave nectar or honey
  • 2 large eggs
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • ½ cup roasted peanuts, chopped, unsalted
  • ½ cup chocolate chips

Instructions

  1. Mix peanut butter, agave, and eggs in a large bowl until creamy.
  2. Blend in salt and baking soda.
  3. Fold in chopped peanuts and chocolate chips.
  4. Scoop batter into a paper-lined muffin pan, using one heaping ¼ cup for each cupcake.
  5. Bake at 350°F for 20-25 minutes.
  6. Cool for 2 hours before serving.
