Instructions
- 1. Preheat the oven to 350°F.
- 2. In a large bowl, mix almond flour, salt, and baking soda.
- 3. In a small bowl, combine melted coconut oil, honey, and vanilla.
- 4. Add the wet ingredients to the dry ingredients and stir until combined; refrigerate while making the jam.
- 5. Heat berries in a saucepan on low, then add maple syrup and chia seeds, stirring until berries burst.
- 6. Mash the mixture with a fork and let it gel.
- 7. Roll the dough into balls and place them on a parchment-lined cookie sheet, creating a thumbprint in each.
- 8. Bake for 8-10 minutes or until slightly golden; if puffed, press down the centers again.
- 9. Once cooled, add about 1 tsp of the chia jam into each cookie.
