Ingredients

The cookies

  • 2 cups almond flour
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¼ cup coconut oil, melted
  • 3 Tbsp honey
  • 1 tsp vanilla

The chia jam

  • 1 Tbsp chia seeds
  • 1 Tbsp maple syrup
  • ½ cup berries

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a large bowl, mix almond flour, salt, and baking soda.
  3. 3. In a small bowl, combine melted coconut oil, honey, and vanilla.
  4. 4. Add the wet ingredients to the dry ingredients and stir until combined; refrigerate while making the jam.
  5. 5. Heat berries in a saucepan on low, then add maple syrup and chia seeds, stirring until berries burst.
  6. 6. Mash the mixture with a fork and let it gel.
  7. 7. Roll the dough into balls and place them on a parchment-lined cookie sheet, creating a thumbprint in each.
  8. 8. Bake for 8-10 minutes or until slightly golden; if puffed, press down the centers again.
  9. 9. Once cooled, add about 1 tsp of the chia jam into each cookie.
