Ingredients

  • 2 cups blanched almond flour

  • 1 cup dried cranberries
  • ½ cup grapeseed oil or palm shortening
  • 3 large eggs
  • ½ cup agave nectar or honey
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together the almond flour, salt, baking soda, and cranberries.
  3. In a separate small bowl, combine the oil, eggs, agave, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Spoon the batter into a paper-lined muffin pan.
  6. Bake for 25-30 minutes until golden brown.
  7. Cool the muffins before serving.
