Thai Basil Squid

Ingredients

The squid

  • 12 oz squid, cleaned and cut into rings

The sauce

  • 1 tablespoon oil
  • 3 tablespoons Nam Prik Pao, Thai roasted chili paste
  • 3-4 pieces Thai chilies, lightly pounded
  • 1 teaspoon fish sauce

The herbs

  • ½ cup Thai basil leaves, stems removed

Instructions

  1. Clean and cut the squid into pieces, then rinse with cold water.
  2. Boil a pot of water and quickly blanch the squid for 5-10 seconds, then drain.
  3. Heat oil in a wok and add the roasted chili paste and Thai chilies, stir-frying until aromatic.
  4. Add the squid to the wok and stir to combine.
  5. Stir in the fish sauce and then add the basil leaves, cooking until wilted and the squid is fully cooked.
  6. Serve immediately with rice.
