Salt and Pepper Squid

The squid

cleaned squid tubes, cut into rings

The frying batter

all-purpose flour

corn starch

baking soda

Instructions
- Rinse the squid under water and pat dry with paper towels.
- Mix all the ingredients for the frying batter until well combined, then add the squid and stir to coat evenly.
- Heat 2 to 3 inches of oil in a wok or frying pan to 350°F (175°C) and gently drop in the squid, loosening them with a spatula.
- Deep-fry the squid until golden brown and crispy, then remove and drain excess oil on paper towels.
- In a skillet, heat ½ tablespoon of oil over high heat, add scallions and red chilies, then stir quickly.
- Return the fried squid to the skillet, add salt and white pepper, and stir to combine well before serving hot.
