Instructions
- Soak the bamboo skewers in warm water if cooking right away or overnight.
- Slice the chicken tenders in half lengthwise and pound to an even thickness.
- Combine the marinade ingredients in a bowl and whisk together.
- Add the marinade to the chicken, ensuring it's well coated, and marinate for at least 30 minutes or overnight.
- For the peanut sauce, warm the peanut butter in the microwave, then whisk in the remaining sauce ingredients and adjust to taste.
- Remove the chicken from the marinade and thread onto the skewers.
- Grill the chicken satay in batches, using foil to protect the skewer handles from burning.
- Garnish with cilantro and serve with lime wedges and peanut sauce.
