Ingredients

The Chicken

  • 1 pound skinless chicken breast
  • ¼ cup cornstarch
  • 1 tablespoon oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 large yellow onion, quartered
  • 2 large bell peppers, sliced
  • 15 small dried chilis, optional
  • 1 teaspoon Szechuan peppercorns, optional

The Szechuan Sauce

  • ¼ cup rice wine vinegar
  • ¼ cup soy sauce
  • 1 tablespoon hoisin sauce
  • ¼ cup water
  • 1 tablespoon cornstarch
  • 3 tablespoons brown sugar

Instructions

  1. Step 1: Coat the cubed chicken in cornstarch by shaking it in a ziplock bag.
  2. Step 2: Whisk together the sauce ingredients in a bowl and stir in cornstarch gradually.
  3. Step 3: Heat oil in a non-stick pan and stir-fry the chicken until crispy.
  4. Step 4: Sauté minced ginger and garlic, then add the onion and bell peppers until tender.
  5. Step 5: Return the chicken to the pan, drizzle with sauce, and cook until thickened.
