Ingredients

The salad

  • 1 cup uncooked whole-wheat orzo
  • ½ cup cherry tomatoes, chopped
  • 1 whole bell pepper, chopped
  • 1 cup spinach, chopped
  • ¼ cup red onion, finely chopped
  • ¼ cup kalamata olives, chopped
  • cup feta cheese (optional)

The dressing

  • 1 tbsp olive oil
  • 1 whole juice of a lemon
  • 1 clove garlic, minced
  • ¼ tsp salt
  • to taste pepper

Instructions

  1. 1. Boil salted water in a medium pot and cook the orzo for about 8-10 minutes, then drain and let it cool.
  2. 2. While the orzo cooks, chop the tomatoes, bell pepper, spinach, red onion, and kalamata olives.
  3. 3. In a large bowl, combine the chopped vegetables with feta, olive oil, lemon juice, garlic, salt, and pepper.
  4. 4. Once the orzo is cooled, add it to the bowl and stir everything together. Serve cold.
