Greek Orzo Pasta Salad

The salad

uncooked whole-wheat orzo

The dressing

Instructions
- 1. Boil salted water in a medium pot and cook the orzo for about 8-10 minutes, then drain and let it cool.
- 2. While the orzo cooks, chop the tomatoes, bell pepper, spinach, red onion, and kalamata olives.
- 3. In a large bowl, combine the chopped vegetables with feta, olive oil, lemon juice, garlic, salt, and pepper.
- 4. Once the orzo is cooled, add it to the bowl and stir everything together. Serve cold.
