Gluten-Free Chocolate Chip Cookies

Instructions
- 1. Cream the butter and sugars in a large mixing bowl using a mixer.
- 2. Add the egg and vanilla, and mix until well combined.
- 3. Gradually add the gluten-free baking mix in two batches until the dough is formed.
- 4. Stir in the chocolate chips, cover the dough, and refrigerate for at least 4-6 hours or overnight.
- 5. Preheat the oven to 350°F (176°C).
- 6. Scoop rounded tablespoon amounts of dough, roll into balls, and place them on a baking sheet spaced 2 inches apart.
- 7. Bake for 8-10 minutes until the edges are slightly golden brown.
- 8. Let the cookies rest on the pan for 5 minutes before transferring to a cooling rack.
