Ingredients

  • ½ cup vegan or dairy butter
  • ¼ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup gluten-free baking mix
  • 1 cup semisweet chocolate chips

Instructions

  1. 1. Cream the butter and sugars in a large mixing bowl using a mixer.
  2. 2. Add the egg and vanilla, and mix until well combined.
  3. 3. Gradually add the gluten-free baking mix in two batches until the dough is formed.
  4. 4. Stir in the chocolate chips, cover the dough, and refrigerate for at least 4-6 hours or overnight.
  5. 5. Preheat the oven to 350°F (176°C).
  6. 6. Scoop rounded tablespoon amounts of dough, roll into balls, and place them on a baking sheet spaced 2 inches apart.
  7. 7. Bake for 8-10 minutes until the edges are slightly golden brown.
  8. 8. Let the cookies rest on the pan for 5 minutes before transferring to a cooling rack.
