Classic Chicken Marsala

The chicken and mushrooms

boneless skinless chicken breast or chicken tenders

baby bella mushrooms or regular mushrooms
The sauce

extra virgin olive oil
to taste
to sauté chicken and mushrooms

Marsala

Instructions
- Prepare the chicken by trimming away any fat and skin.
- Dredge the chicken in seasoned flour and add it to a hot sauté pan with olive oil.
- Sauté the chicken for 2-3 minutes on one side, then turn it over and add the mushrooms.
- Continue to sauté until the chicken is well seared and the mushrooms are cooked.
- Add ¾ cup of Marsala and let it cook for 1-2 minutes to burn off the alcohol.
- Add the chicken stock and reduce the heat to simmer as the sauce reduces.
- Season with granulated onion and black pepper to taste.
- When the sauce has reduced by half, roll 1 tablespoon of butter in flour and add it to the sauce to thicken.
- Mix in the remaining Marsala wine and adjust seasoning before serving.
