Ingredients

The Soup

  • 2 teaspoons olive oil
  • 1 pound skinless chicken breasts
  • teaspoons Italian Seasoning
  • to taste salt and pepper
  • ½ cup chopped white onion
  • ½ cup chopped carrots
  • ½ cup chopped celery
  • 3 cloves garlic
  • 5 cups chicken broth
  • 10 strips lasagna noodles

The Cream Sauce

  • ½ cup milk
  • ½ cup heavy whipping cream
  • 4 oz cream cheese
  • ½ cup shredded Parmesan Reggiano cheese
  • ¼ cup dry white wine
  • 3 cups fresh spinach

Thickener

  • 2 tablespoons flour
  • 2 tablespoons water

Instructions

  1. Heat olive oil in a pot and cook chicken with Italian seasoning, salt, and pepper until browned.
  2. Remove chicken and set aside. In the same pot, add more olive oil and cook onions, carrots, and celery until soft.
  3. Add garlic and stir, then pour in chicken broth and return chicken to the pot.
  4. Add broken lasagna noodles and ensure they are submerged in the liquid. Cook under pressure for 5 minutes.
  5. Release steam, then add milk, heavy cream, cheeses, wine, and spinach. Stir until melted.
  6. Combine flour and water in a bowl, then add to the pot to thicken the soup.
