Instructions
- Process the digestive biscuits and pistachios into crumbs for the crust.
- Mix the melted butter with the crumb mixture and press it into a tart or cheesecake pan.
- Bake the crust at 350°F for 10 minutes.
- In a food processor, blend the feta and heavy cream until smooth.
- Add cream cheese and blend until combined.
- Incorporate eggs, lime juice, vanilla, and lime zest, then blend until smooth.
- Add flour and sugar, processing until fully incorporated.
- Pour the cheesecake mixture into the cooled crust and bake at 350°F for about 20 minutes, avoiding browning or cracking.
- Prepare the ganache by melting chocolate and heavy cream over boiling water, stirring until smooth.
- Allow the ganache to cool while the cheesecake cools.
- Pour the ganache over the cheesecake and smooth it out.
- Refrigerate the cheesecake for at least 4 hours or overnight before serving.
