Ingredients

The cheesecake

  • 8 oz Feta Cheese
  • 8 oz Cream Cheese
  • ½ cup Heavy Cream
  • 2 Large Eggs
  • ¾ cup Sugar
  • 2 tablespoon All Purpose Flour
  • 1 tablespoon Lime Zest
  • 1 Juice of one lime
  • 1 tablespoon Vanilla Extract

The crust

  • 12 Digestive Biscuits
  • ½ Cup Salted Pistachios (or pecans)
  • 4 oz Unsalted butter (melted)

The ganache

  • 8 oz Semi-sweet chocolate (chopped)
  • 4 oz Heavy cream

Instructions

  1. Process the digestive biscuits and pistachios into crumbs for the crust.
  2. Mix the melted butter with the crumb mixture and press it into a tart or cheesecake pan.
  3. Bake the crust at 350°F for 10 minutes.
  4. In a food processor, blend the feta and heavy cream until smooth.
  5. Add cream cheese and blend until combined.
  6. Incorporate eggs, lime juice, vanilla, and lime zest, then blend until smooth.
  7. Add flour and sugar, processing until fully incorporated.
  8. Pour the cheesecake mixture into the cooled crust and bake at 350°F for about 20 minutes, avoiding browning or cracking.
  9. Prepare the ganache by melting chocolate and heavy cream over boiling water, stirring until smooth.
  10. Allow the ganache to cool while the cheesecake cools.
  11. Pour the ganache over the cheesecake and smooth it out.
  12. Refrigerate the cheesecake for at least 4 hours or overnight before serving.
