Ingredients

Brownie bottom

  • cup coconut oil
  • 1 cup semi-sweet chocolate
  • ¾ cup sugar
  • 2 large eggs
  • 2 tablespoons cocoa powder
  • 3 tablespoons cornstarch

Cheesecake layer

  • cups heavy cream
  • 3 cups cream cheese
  • ½ cup sugar
  • 2 tablespoons powdered sugar
  • ¼ cup sour cream
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract

Ganache topping

  • 1 cup chocolate chips
  • 5 tablespoons heavy cream

Instructions

  1. Preheat the oven to 180C/350F.
  2. Melt the coconut oil and chocolate, then mix in the sugar.
  3. Whisk in the eggs one at a time, then add cocoa powder and cornstarch until smooth.
  4. Transfer the brownie batter to a cake pan and bake for 20-25 minutes.
  5. Beat heavy cream until stiff peaks form and set aside.
  6. In another bowl, beat cream cheese and sugar until creamy, then add remaining cheesecake ingredients and mix until smooth.
  7. Gently fold the whipped cream into the cheesecake mixture.
  8. Spread the cheesecake mixture over the cooled brownie base and refrigerate overnight.
  9. Melt chocolate and cream for the ganache, then pour over the cheesecake and let set at room temperature.
