Instructions
- Preheat the oven to 180C/350F.
- Melt the coconut oil and chocolate, then mix in the sugar.
- Whisk in the eggs one at a time, then add cocoa powder and cornstarch until smooth.
- Transfer the brownie batter to a cake pan and bake for 20-25 minutes.
- Beat heavy cream until stiff peaks form and set aside.
- In another bowl, beat cream cheese and sugar until creamy, then add remaining cheesecake ingredients and mix until smooth.
- Gently fold the whipped cream into the cheesecake mixture.
- Spread the cheesecake mixture over the cooled brownie base and refrigerate overnight.
- Melt chocolate and cream for the ganache, then pour over the cheesecake and let set at room temperature.
