Ingredients

The filling

  • 1 Tbsp. cream cheese
  • ½ tsp. granulated sugar

The dough

  • 1 oz. semisweet or bittersweet chocolate (68%–70% cacao)
  • 2 Tbsp. unsalted butter
  • 1 large egg yolk
  • ½ tsp. vanilla extract
  • ¼ tsp. kosher salt
  • tsp. baking soda
  • 3 Tbsp. all-purpose flour
  • 2 Tbsp. Dutch-process cocoa powder
  • ¼ cup granulated sugar

Instructions

  1. Preheat the oven to 375°F and prepare the cream cheese filling by mixing cream cheese and ½ tsp. sugar until smooth. Chill the mixture.
  2. Melt the chocolate and butter together in a microwave-safe bowl, stirring until smooth, then let it cool slightly.
  3. Combine the egg yolk, vanilla, salt, baking soda, and remaining sugar into the chocolate mixture and mix until smooth. Then add flour and cocoa powder and stir until just incorporated.
  4. Divide the dough in half, flatten each piece, place a cream cheese ball in the center, wrap the dough around it, and roll into a ball.
  5. Place the cookies on a baking sheet lined with parchment paper, bake for 7–9 minutes, and let cool for 5 minutes before serving.
