Instructions
- Preheat the oven to 375°F and prepare the cream cheese filling by mixing cream cheese and ½ tsp. sugar until smooth. Chill the mixture.
- Melt the chocolate and butter together in a microwave-safe bowl, stirring until smooth, then let it cool slightly.
- Combine the egg yolk, vanilla, salt, baking soda, and remaining sugar into the chocolate mixture and mix until smooth. Then add flour and cocoa powder and stir until just incorporated.
- Divide the dough in half, flatten each piece, place a cream cheese ball in the center, wrap the dough around it, and roll into a ball.
- Place the cookies on a baking sheet lined with parchment paper, bake for 7–9 minutes, and let cool for 5 minutes before serving.
