Instructions
- Preheat the oven to 400°F and prepare a baking tray with parchment paper.
- Drain the excess water from the tofu and cut it into small cubes.
- In a bowl, mix the tofu with tamari, cornstarch, olive oil, salt, and black pepper without breaking the cubes.
- Spread the tofu on the tray and bake for 25-30 minutes, flipping halfway through.
- In a pan, heat olive oil and garlic over medium-high heat, then add smoked tofu until slightly golden.
- Add the remaining vegetables and cook until wilted, about 3-4 minutes.
- Mix cornstarch, oyster sauce, and tamari in a bowl, then add to the veggies and combine until sticky.
- Prepare spring roll wrappers by placing a spoonful of the mixture at the bottom, rolling halfway, folding the sides, and sealing with a cornstarch-water mixture.
- Heat avocado oil in a large saucepan until 365°F and fry the spring rolls until golden brown, about 1 ½ - 2 minutes.
- Transfer cooked spring rolls to a paper towel to drain excess oil.
- Assemble individual bowls with all ingredients and add spring rolls, serving with peanut sauce.
