Vegan Shawarma

Ingredients

The Shawarma

  • 2 portobello mushrooms portobello mushrooms
  • 3-4 cloves garlic
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 ½ teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • ¾ - 1 teaspoon sea salt
  • ½ - ¾ teaspoon cloves
  • ¼ - ½ teaspoon crushed red pepper
  • ½ teaspoon cinnamon
  • to taste drizzle olive oil or broth

To Serve

  • 4 pieces pita bread
  • to taste vegan tzatziki
  • to taste pickles
  • to taste tomatoes
  • to taste lettuce
  • to taste red onion

Instructions

  1. Preheat the oven to 350°F.
  2. Mix all ingredients except mushrooms or tempeh in a bowl.
  3. If using portobello mushrooms, thinly slice them and place in a baking pan.
  4. If using tempeh, cut it in half and boil for 10-15 minutes, then slice into ¼ inch pieces.
  5. Add the spice mix to the mushrooms or tempeh and massage to coat well.
  6. Allow to sit for 5-10 minutes if desired.
  7. Bake for 35-40 minutes until golden brown, mixing halfway through.
  8. Warm the pita in the oven for 3-5 minutes.
  9. Assemble the shawarma in the pita and serve with toppings.
