Instructions
- Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
- In a small bowl, mix the shawarma spice ingredients together.
- Season the chickpeas with the spice mix before and after roasting.
- For the zhoug, blend cilantro, olive oil, jalapeño, garlic, cumin, coriander, salt, and pepper until smooth.
- In another bowl, mix the yogurt sauce ingredients together.
- Assemble the wraps by spreading hummus on the pitas and adding chickpeas, cucumber, tomato, pickled onion, mint, zhoug, and yogurt sauce.
