Ingredients

Shawarma Spice

  • 1 tablespoon coriander
  • 1 tablespoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • teaspoon cayenne
  • to taste sea salt and freshly ground black pepper

Wrap Ingredients

  • cups Roasted Chickpeas with Shawarma spice
  • 4 pieces pitas, warmed
  • to taste hummus
  • 2 pieces Persian cucumbers, thinly sliced
  • 12 pieces cherry tomatoes, quartered
  • to taste pickled onions or thinly sliced red onion
  • handful fresh mint
  • to taste Zhoug

Zhoug Sauce

  • 1 cup cilantro
  • 2 tablespoons extra-virgin olive oil
  • 1 piece jalapeño
  • 1 clove garlic
  • ¼ teaspoon cumin
  • ¼ teaspoon ground coriander
  • teaspoon sea salt
  • to taste freshly ground black pepper

Yogurt Sauce (optional)

  • ½ cup plain yogurt
  • ½ tablespoon extra-virgin olive oil
  • ½ tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  2. In a small bowl, mix the shawarma spice ingredients together.
  3. Season the chickpeas with the spice mix before and after roasting.
  4. For the zhoug, blend cilantro, olive oil, jalapeño, garlic, cumin, coriander, salt, and pepper until smooth.
  5. In another bowl, mix the yogurt sauce ingredients together.
  6. Assemble the wraps by spreading hummus on the pitas and adding chickpeas, cucumber, tomato, pickled onion, mint, zhoug, and yogurt sauce.
