Chickpea Shawarma Salad

Ingredients

The Chickpeas

  • 1 15-ounce can chickpeas
  • 1 Tbsp olive oil
  • 1 heaping tsp cumin
  • ½ heaping tsp smoked paprika
  • ½ heaping tsp turmeric
  • ½ scant tsp sea salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • 1 pinch black pepper
  • 1 pinch ground coriander
  • 1 pinch cardamom

The Salad

  • 5 ounces spring mix lettuce
  • 10 pieces cherry tomatoes
  • ¼ cup red onion
  • ¾ cup fresh parsley
  • 20 pieces pita chips

The Dressing

  • ½ cup hummus
  • 3 cloves garlic
  • 1 tsp dried dill
  • 1 medium lemon
  • to thin water

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. In a bowl, combine washed chickpeas with olive oil and seasonings, then lightly mash half of them.
  3. Spread the chickpeas on a baking sheet and bake for 20-22 minutes until crispy.
  4. Prepare the salad ingredients and place them in a bowl.
  5. In another bowl, whisk together the dressing ingredients until smooth.
  6. Combine the baked chickpeas and pita chips with the salad, adding half of the dressing.
  7. Serve with the remaining dressing on the side.
