Ingredients

The pie crust

  • 1 recipe homemade pie crust (makes 2 crusts)

The filling

  • 7-8 medium peaches (about 7 cups of peach chunks)
  • ½ cup packed light or dark brown sugar
  • ½ cup all-purpose flour or ¼ cup instant tapioca
  • 2 teaspoons fresh lemon juice
  • ¼ teaspoon ground cinnamon

The crumble topping

  • ½ cup packed light or dark brown sugar
  • 1 teaspoon ground cinnamon
  • ¾ cup all-purpose flour
  • 5 tablespoons unsalted butter (melted and slightly cooled)
  • ½ cup chopped walnuts (optional)

Instructions

  1. Prepare the pie crust according to the recipe through step 5.
  2. Peel and cut the peaches into 1-2 inch chunks, then combine with brown sugar, flour, lemon juice, and cinnamon in a bowl.
  3. Preheat the oven to 400°F (204°C).
  4. Roll out one disc of chilled pie dough to a 12-inch circle and place it into a 9-inch pie dish.
  5. Spoon the peach filling into the crust, leaving excess liquid behind.
  6. Trim excess dough and crimp the edges of the crust.
  7. In a medium bowl, combine brown sugar, cinnamon, and flour for the crumble topping, then stir in melted butter and walnuts.
  8. Sprinkle the crumble topping over the peach filling.
  9. Bake for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes.
  10. Allow the pie to cool for 3 hours before serving.
