Ingredients

The macaroons

  • 2 large Egg whites
  • cup Besti Monk Fruit Allulose Blend
  • 1 tsp Vanilla extract
  • ¼ tsp Sea salt
  • 2 cups Unsweetened shredded coconut

Optional chocolate drizzle

  • 2 oz Sugar-free Dark Chocolate Chips
  • ½ tbsp Coconut oil

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Beat the egg whites with a hand mixer until medium-stiff peaks form.
  3. Gradually add the sweetener while continuing to beat, then mix in the sea salt and vanilla extract.
  4. Gently fold in the shredded coconut without breaking down the egg whites.
  5. Use a cookie scoop to drop the mixture onto the prepared baking sheet.
  6. Bake for 15 to 20 minutes until golden brown.
  7. If desired, melt the chocolate chips and coconut oil for a drizzle, then cool the macaroons to set the chocolate.
