Ingredients

The muffins

  • 3 large overripe bananas
  • 1 unit egg
  • ¾ cup whole milk
  • ½ cup sugar
  • ¼ cup olive oil
  • 1 teaspoon vanilla extract
  • cup all-purpose flour
  • cup whole wheat flour
  • ½ cup oats
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt

Optional add-ins

  • ½ cup chopped nuts (such as walnuts or pecans) or chocolate chips

Instructions

  1. Preheat the oven to 375°F and prepare a muffin pan with liners or grease it.
  2. Mash the bananas and egg together in a large bowl until uniform.
  3. Stir in the milk, sugar, olive oil, and vanilla until combined.
  4. Add the all-purpose flour, whole wheat flour, oats, baking powder, cinnamon, and salt, and stir until just combined, being careful not to over-mix.
  5. If using, fold in the nuts or chocolate chips.
  6. Pour the batter into the muffin pan, filling each cup about ⅞ full.
  7. Bake for 22 minutes, or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
