Instructions
- Preheat the oven to 375°F and prepare a muffin pan with liners or grease it.
- Mash the bananas and egg together in a large bowl until uniform.
- Stir in the milk, sugar, olive oil, and vanilla until combined.
- Add the all-purpose flour, whole wheat flour, oats, baking powder, cinnamon, and salt, and stir until just combined, being careful not to over-mix.
- If using, fold in the nuts or chocolate chips.
- Pour the batter into the muffin pan, filling each cup about ⅞ full.
- Bake for 22 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
