Ingredients

The cake

  • 1 and ¾ cups all-purpose flour
  • ¾ cup unsweetened natural cocoa powder
  • 1 and ¾ cups granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons espresso powder (optional)
  • ½ cup canola or vegetable oil
  • 2 large eggs
  • ¾ cup full fat sour cream
  • ½ cup buttermilk
  • 2 teaspoons pure vanilla extract
  • ½ cup hot water or coffee
  • 1 cup mini or regular semi-sweet chocolate chips (optional)
  • fresh berries and/or chocolate shavings garnish optional

Chocolate Mousse

  • ½ cup hot water
  • ¼ cup unsweetened cocoa powder
  • 2 4-ounce semi-sweet chocolate bars
  • 2 cups heavy cream
  • 2 Tablespoons confectioners’ sugar
  • ½ teaspoon pure vanilla extract

Chocolate Ganache

  • 2 4-ounce semi-sweet chocolate bars
  • 1 cup heavy cream

Instructions

  1. Preheat the oven and prepare the cake pans with grease and parchment paper.
  2. Mix the dry ingredients for the cake in a large bowl.
  3. Combine the wet ingredients in another bowl and then mix with the dry ingredients.
  4. Divide the batter among the prepared pans and bake until a toothpick comes out clean.
  5. Cool the cakes completely in the pans.
  6. Prepare the chocolate mousse by whisking hot water and cocoa, then melting the chocolate.
  7. Whip the heavy cream with sugar and vanilla, then fold in the chocolate mixture.
  8. Assemble the cake layers with mousse in between each layer and refrigerate.
  9. Prepare the ganache by heating cream and pouring it over chopped chocolate, then stirring until smooth.
  10. Pour the ganache over the assembled cake and smooth it out.
  11. Garnish as desired and serve.
