Chocolate Mousse

Instructions
- Preheat the oven and prepare the cake pans with grease and parchment paper.
- Mix the dry ingredients for the cake in a large bowl.
- Combine the wet ingredients in another bowl and then mix with the dry ingredients.
- Divide the batter among the prepared pans and bake until a toothpick comes out clean.
- Cool the cakes completely in the pans.
- Prepare the chocolate mousse by whisking hot water and cocoa, then melting the chocolate.
- Whip the heavy cream with sugar and vanilla, then fold in the chocolate mixture.
- Assemble the cake layers with mousse in between each layer and refrigerate.
- Prepare the ganache by heating cream and pouring it over chopped chocolate, then stirring until smooth.
- Pour the ganache over the assembled cake and smooth it out.
- Garnish as desired and serve.
