Chocolate Mousse

dark or semi-sweet chocolate, chopped

heavy whipping cream, very cold

egg whites, room temperature

powdered sugar or sugar substitute
Instructions
- 1. Boil water in a pot, then remove from heat and melt the chocolate in a bowl placed over the hot water.
- 2. In a large mixing bowl, beat the heavy cream on medium speed until soft peaks form.
- 3. In another bowl, whip the egg whites on medium speed to soft peaks, then add sugar and beat until stiff peaks form.
- 4. Gently fold the egg whites into the melted chocolate in thirds until no white streaks remain.
- 5. Fold the whipped cream into the chocolate mixture in thirds until no white streaks remain.
- 6. Scoop the mousse into serving dishes, cover, and refrigerate for an hour before serving.
