Ingredients

  • 8 oz dark or semi-sweet chocolate, chopped
  • 1 pint heavy whipping cream, very cold
  • 3 large egg whites, room temperature
  • ½ cup powdered sugar or sugar substitute

Instructions

  1. 1. Boil water in a pot, then remove from heat and melt the chocolate in a bowl placed over the hot water.
  2. 2. In a large mixing bowl, beat the heavy cream on medium speed until soft peaks form.
  3. 3. In another bowl, whip the egg whites on medium speed to soft peaks, then add sugar and beat until stiff peaks form.
  4. 4. Gently fold the egg whites into the melted chocolate in thirds until no white streaks remain.
  5. 5. Fold the whipped cream into the chocolate mixture in thirds until no white streaks remain.
  6. 6. Scoop the mousse into serving dishes, cover, and refrigerate for an hour before serving.
