Ingredients

The mousse

  • 1 lb. semisweet chocolate, chopped
  • 2 cups heavy cream
  • 7 large egg yolks, room temperature
  • 3 Tbsp. sugar
  • cup sugar
  • ½ tsp. vanilla extract
  • 5 large egg whites, room temperature
  • ¾ tsp. Diamond Crystal or ½ tsp. Morton kosher salt

For serving

  • to taste whipped cream
  • to taste maraschino cherries
  • to taste extra-virgin olive oil
  • to taste flaky sea salt

Instructions

  1. Melt chocolate and heavy cream over a double boiler until smooth.
  2. Whisk egg yolks and sugar until dissolved, then combine with a small amount of the chocolate mixture, followed by the rest.
  3. Beat egg whites and salt until foamy, then gradually add remaining sugar and beat until soft peaks form.
  4. Gently fold egg whites into the chocolate mixture and transfer to a serving bowl.
  5. Chill for at least 5 hours before serving.
  6. Serve with toppings on the side.
