Instructions
- Melt the chocolate and heavy cream in a heatproof bowl over simmering water, stirring until smooth.
- Whisk egg yolks and sugar until dissolved, then combine with a small amount of the chocolate mixture to warm the eggs.
- Fold in the remaining chocolate mixture and vanilla, then let it cool.
- Beat the egg whites and salt until foamy, gradually adding sugar until soft peaks form.
- Gently fold the egg whites into the chocolate mixture in two additions.
- Transfer the mousse to a serving bowl, cover, and chill for at least 5 hours.
- Serve with toppings on the side.
