Chocolate Mousse

Ingredients

The mousse

  • 1 lb semisweet chocolate, chopped
  • 2 cups heavy cream
  • 7 large egg yolks, room temperature
  • 3 Tbsp sugar
  • cup sugar
  • ½ tsp vanilla extract
  • 5 large egg whites, room temperature
  • ¾ tsp Diamond Crystal or Morton kosher salt

For serving

  • to taste whipped cream
  • to taste maraschino cherries
  • to taste extra-virgin olive oil
  • to taste flaky sea salt

Instructions

  1. Melt the chocolate and heavy cream in a heatproof bowl over simmering water, stirring until smooth.
  2. Whisk egg yolks and sugar until dissolved, then combine with a small amount of the chocolate mixture to warm the eggs.
  3. Fold in the remaining chocolate mixture and vanilla, then let it cool.
  4. Beat the egg whites and salt until foamy, gradually adding sugar until soft peaks form.
  5. Gently fold the egg whites into the chocolate mixture in two additions.
  6. Transfer the mousse to a serving bowl, cover, and chill for at least 5 hours.
  7. Serve with toppings on the side.
