Julia Child's Chocolate Mousse

Instructions
- Melt the chocolate, butter, and coffee together in a bowl over simmering water until smooth.
- Prepare an ice bath in a large bowl filled with ice water.
- Whisk the egg yolks with sugar, rum, and water over simmering water until thick, then cool in the ice bath.
- Fold the melted chocolate mixture into the cooled egg yolk mixture.
- Beat the egg whites with salt until frothy, then add sugar and beat until thick and shiny.
- Fold one-third of the egg whites into the chocolate mixture, then fold in the remaining whites gently.
- Transfer the mousse to a serving bowl or individual dishes and refrigerate for at least 4 hours until firm.
- Optional: Shave dark chocolate over the top before serving.
