Julia Child's Chocolate Mousse

Ingredients

  • 6 ounces bittersweet or semisweet chocolate, chopped
  • 6 ounces unsalted butter, cut into small pieces
  • ¼ cup dark-brewed coffee
  • 4 large eggs, separated
  • ½ cup sugar
  • 1 tablespoon sugar
  • 2 tablespoons dark rum
  • 1 tablespoon water
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • to taste none dark chocolate for shaving over top, optional

Instructions

  1. Melt the chocolate, butter, and coffee together in a bowl over simmering water until smooth.
  2. Prepare an ice bath in a large bowl filled with ice water.
  3. Whisk the egg yolks with sugar, rum, and water over simmering water until thick, then cool in the ice bath.
  4. Fold the melted chocolate mixture into the cooled egg yolk mixture.
  5. Beat the egg whites with salt until frothy, then add sugar and beat until thick and shiny.
  6. Fold one-third of the egg whites into the chocolate mixture, then fold in the remaining whites gently.
  7. Transfer the mousse to a serving bowl or individual dishes and refrigerate for at least 4 hours until firm.
  8. Optional: Shave dark chocolate over the top before serving.
