Classical French Chocolate Mousse

Instructions
- Melt the chocolate in a stainless steel bowl over simmering water, stirring until fully melted.
- Cut the butter into pieces and mix into the melted chocolate until absorbed, then set aside to cool.
- In a mixer, whip the egg yolks until doubled in size, then slowly add sugar while continuing to whip.
- Add the coffee and Kahlua to the egg yolk mixture and whisk over simmering water until thickened.
- Transfer the thickened yolk mixture to a stand mixer and whip until cooled.
- Fold the cooled chocolate mixture into the sabayon until well blended.
- Whip the cream until stiff peaks form, then gently fold it into the chocolate mixture.
- Spoon the mousse into serving dishes before it fully sets.
