Classical French Chocolate Mousse

Ingredients

  • 13 oz semisweet chocolate, finely cut
  • 6 tablespoons unsalted butter, softened
  • ½ cup sugar
  • 6 large egg yolks
  • ¼ cup strong black coffee or espresso
  • ¼ cup Kahlua (or substitute with black coffee or espresso)
  • 3 cups heavy cream

Instructions

  1. Melt the chocolate in a stainless steel bowl over simmering water, stirring until fully melted.
  2. Cut the butter into pieces and mix into the melted chocolate until absorbed, then set aside to cool.
  3. In a mixer, whip the egg yolks until doubled in size, then slowly add sugar while continuing to whip.
  4. Add the coffee and Kahlua to the egg yolk mixture and whisk over simmering water until thickened.
  5. Transfer the thickened yolk mixture to a stand mixer and whip until cooled.
  6. Fold the cooled chocolate mixture into the sabayon until well blended.
  7. Whip the cream until stiff peaks form, then gently fold it into the chocolate mixture.
  8. Spoon the mousse into serving dishes before it fully sets.
