Smoked Chocolate Mousse

Ingredients

  • 6 ounces dark chocolate baking chips
  • 2 eggs eggs (room temperature)
  • ¼ cup water
  • ¼ cup Just Date sugar, granulated cane sugar, or muscovado sugar
  • 4 tablespoons unsalted butter
  • ¼ teaspoon fine grain sea salt
  • 1 cup cold heavy cream
  • 2 teaspoons almond extract

Instructions

  1. Smoke the chocolate by placing it in a shallow, heat-proof dish and smoking it for about 18 minutes.
  2. Separate the egg whites and yolks, then beat the egg whites until they hold stiff peaks.
  3. In a double boiler, combine the water, sugar, butter, and salt, stirring until smooth.
  4. Remove from heat and stir in the smoked chocolate, then beat in the egg yolks until smooth.
  5. Gently fold in the beaten egg whites until the mixture is uniform.
  6. Divide the mousse into serving cups and chill for a few hours or overnight.
  7. Before serving, whisk the heavy cream to soft peaks, adding almond extract and sugar to taste.
  8. Serve the mousse topped with whipped cream.
