Smoked Chocolate Mousse

Instructions
- Smoke the chocolate by placing it in a shallow, heat-proof dish and smoking it for about 18 minutes.
- Separate the egg whites and yolks, then beat the egg whites until they hold stiff peaks.
- In a double boiler, combine the water, sugar, butter, and salt, stirring until smooth.
- Remove from heat and stir in the smoked chocolate, then beat in the egg yolks until smooth.
- Gently fold in the beaten egg whites until the mixture is uniform.
- Divide the mousse into serving cups and chill for a few hours or overnight.
- Before serving, whisk the heavy cream to soft peaks, adding almond extract and sugar to taste.
- Serve the mousse topped with whipped cream.
