Ingredients

The salad

  • 1 16-ounce package coleslaw mix
  • 1 package dry ramen noodles
  • 1 15-ounce can mandarin oranges (drained)
  • 1 cup frozen shelled edamame beans (thawed)
  • 6 pieces green onions (chopped)
  • ΒΌ cup slivered almonds
  • 1 tablespoon black sesame seeds

The dressing

  • 7 tablespoons seasoned rice vinegar
  • 2 tablespoons vegetable or grapeseed oil
  • 3 teaspoons light soy sauce
  • 3 teaspoons sugar
  • 4 teaspoons sesame oil
  • to taste freshly ground black pepper

Instructions

  1. In a large bowl, combine the coleslaw mix and crumble the dry ramen noodles over it.
  2. Add the drained mandarin oranges, thawed edamame, chopped green onions, slivered almonds, and black sesame seeds to the bowl.
  3. In a separate small bowl, whisk together the rice vinegar, vegetable oil, soy sauce, sugar, sesame oil, and black pepper.
  4. Drizzle the dressing over the salad mixture and toss to combine.
  5. Refrigerate the salad for 1 hour to allow the flavors to meld before serving.
