Ingredients

  • 4 eggs eggs
  • 6 drops vanilla liquid stevia
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • 1 tsp apple cider vinegar
  • 1 cup cashew milk
  • ¼ cup coconut oil
  • ½ cup coconut sugar
  • ¼ tsp xanthan gum
  • 2 tbsp coconut flour
  • cups shredded coconut

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, combine the eggs, vanilla liquid stevia, vanilla extract, sea salt, and apple cider vinegar.
  3. Beat the mixture while gradually adding the liquified coconut oil.
  4. Add the coconut sugar, xanthan gum, coconut flour, and shredded coconut, and beat again.
  5. Pour the mixture into a greased pie dish.
  6. Bake for about 32 minutes.
  7. Let it cool and serve at room temperature.
