Ingredients

  • ¾ cup Coconut Flour
  • ½ cup Unsalted butter (cold, cut into pieces)
  • ¼ cup Besti Monk Fruit Allulose Blend
  • ¼ tsp Sea salt
  • 2 large Eggs
  • ½ tsp Vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9-inch pie pan with parchment paper or grease it well.
  2. In a food processor, combine coconut flour, cold butter, Besti, and sea salt, and pulse until well mixed.
  3. Add the eggs and vanilla extract, then process again until a dough forms.
  4. Press the dough into the pie pan and poke holes in the bottom with a fork.
  5. Bake for 10-15 minutes until firm and lightly golden on the edges, then let it rest for at least 10 minutes before adding filling.
